Classic Carbonara pasta

Instructions

1. Prepare the Sauce:

  - In a large pan, pour the olive oil, add the butter, and heat over medium heat until the butter melts.

  - Add the bacon slices and fry for about three minutes until golden brown.

  - Season the bacon with salt, pepper, and chili. Remove the pan from heat.


2. Prepare the Egg Yolk Mixture:

  - In a small bowl, beat the egg yolks and sweet cream until well combined.


3. Cook the Pasta:

  - In a large pot, bring salted water to a boil (use a teaspoon of coarse salt per liter of water).

  - Cook the pasta according to the manufacturer's instructions.


4. Combine Sauce and Pasta:

  - Once the pasta is ready, add a ladle of pasta cooking water to the sauce pan.

  - Drain the pasta and add it to the pan with the sauce. Mix well until the sauce evenly coats the pasta. Return the pan to medium heat and bring to a gentle boil.


5. Add Egg Yolk Mixture:

  - Transfer the pasta and sauce to a large bowl. Pour the egg yolk and cream mixture over the pasta and mix thoroughly.


6. Finish and Serve:

  - Add two-thirds of the grated Parmesan cheese to the pasta and mix well.

  - Divide the carbonara pasta among four serving plates.

  - Sprinkle the remaining Parmesan cheese on top and serve immediately.
